When I need a quick pick-me-up, this beet juice recipe is my go-to! Beets are packed with iron, and when combined with fresh citrus, the vitamin C helps your body absorb all those nutrients.

Plus, with apples, carrots, and ginger, this ABC juice (apple, beet, and carrot) is loaded with antioxidants, making it the perfect way to nourish and energize your body. I especially love it in the colder months when I need a little extra boost.

As for the flavor, I absolutely love the sweet, earthy taste of beetroot juice, but I know it can be intense for some. That’s why I balance it out with crisp apples, bright citrus, and a touch of spicy fresh ginger for a refreshing and hydrating drink. It’s smooth, naturally sweet, and has just the right amount of zing!

The best part? It takes just minutes to make, whether you’re using a juicer or a blender. I like to enjoy it first thing in the morning to start my day with a burst of nutrients, but it’s also a great afternoon refresher when I need a little extra energy.

Ingredients for Beet Juice

This vibrant juice is made with fresh, nutrient-rich ingredients that yield a naturally sweet, tart, and refreshing drink. Here’s everything you’ll need:

  • Red beets are the star of the show in this pretty juice. Beets are naturally sweet and earthy, packed with iron, vitamins, and antioxidants. For juicing, you’ll want to look for firm, unblemished beets, either with or without their greens. You can cook the greens as you would Swiss chard. Try them in my recipe for Green Shakshuka or add them to this healthy creamed spinach recipe!
  • Apple adds sweetness and tartness to help compliment the earthy flavor of the beets. I prefer to use a Gala or Fuji apple for natural sweetness and a crisp, refreshing taste. 
  • Carrots are packed with beta-carotene and naturally sweeten the juice. If you can get carrots with the greens on they’ll be extra sweet! Use the greens to make a batch of Carrot Top Pesto.
  • Citrus: The acidity from fresh lemon brightens the juice. Plus, it makes it extra refreshing while fresh oranges balance the veggies with their sweetness. Peel these fruits before blending or juicing them or your juice will be bitter! Save the peels to make candied orange (or lemon) peels.
  • Cucumber: Mild, hydrating, and cooling, cucumber lightens up the intensity of the beet juice and balances out the sweetness. I love to add cucumber to any juice I make, especially my Green Juice recipe. 
  • Ginger: A small piece of fresh ginger adds just the right amount of warmth and spice to balance the sweetness of this beet juice recipe. 
  • Sumac (optional) is my little Mediterranean touch in this beet juice recipe. It adds a subtle tangy, citrusy note and I like that it’s the same color as the beets themselves!

How to Make Beet Juice

Making this juice is super simple, and you can do it with either a juicer or a blender. Here’s how:

  • Juicer Method: Run the beets, apple, carrots, citrus pieces, cucumber, and fresh ginger through your juicer. Pour and enjoy immediately.
  • Blender Method: Add the beets, apples, carrots, citrus, cucumber, and ginger to your blender. Add 1 cup of water to help blend smoothly. Close the lid and blend on medium-high speed until everything is fully liquified. Strain using a mesh strainer before serving.

If I’m having this beet juice for breakfast, I like to balance it out with a little protein, either in the form of a slice of Spinach Frittata with Feta or meal-prep friendly Egg Muffins.

If I want something a little more substantial, I’ll add some Egg Toast with Vegetables or my favorite nourishing Sweet Potato Breakfast with a sunny side-up egg and tangy feta.

  • 2 red beets, peeled and diced
  • 1 large gala or fuji apple, cored and diced
  • 2 carrots, peeled and diced
  • 1 lemon, peeled and diced
  • 1 orange, peeled and diced
  • 1 persian cucumber, peeled and diced
  • 1- inch piece fresh ginger, peeled
  • 1 Pinch of sumac, about ½ teaspoon, optional

Instructions
 

  • Juicer method: Run the beets, apple, carrots, lemon, orange, cucumber, and ginger through your juicer. Pour and enjoy
  • Blender method: Add the beets, apples, carrots, citrus, cucumber, and ginger to your blender. Add 1 cup of water. Close the lid and blend on medium-high speed until everything is fully liquified. Strain through a fine mesh strainer before serving.
