Description
Delicious flaky pastry with figs, goat cheese and walnuts. SUPER easy to make! Perfect as a dessert, appetizer or even as part of brunch.

- 1 sheet of good store-bought puff pastry, thawed in fridge for 3 hours or so
- 8 oz fresh black mission figs
- 4–5 oz goat cheese, room temperature
- 1/4 cup walnuts, roughly chopped; more for garnish if desired
- 2 tbsp good fig jam
- 1 tbsp butter, melted
- 1/4 cup fresh mint leaves, roughly chopped (optional)
Instructions
- Preheat oven to 375F.
- Divide thawed puff pastry into four fairly equal rectangular pieces and place on baking sheet lined with parchment paper.
- Spread goat cheese on each piece. Add jam, figs and then chopped walnuts.
- Brush figs and edges of puff pastry with melted butter.
- Slightly turn pastry edges up.
- Bake in 375F oven for 18-20 minutes or until pastry is golden and puffy.
- Garnish with chopped mint leaves and more walnuts, if desired.
