Bright, citrusy, and refreshing, this chilled Rosé Lemonade is served in a pitcher for easy entertaining. Using just a few basic ingredients, this simple cocktail recipe is perfect for cooling down on a hot day over small plates and appetizers.
Make a simple syrup: If you’re using store bought simple syrup skip this step. To make simple syrup at home: In a small saucepan set over medium-high heat, combine 3/4 cup granulated sugar and 3/4 cup water. Stir until the sugar is dissolved and the color changes from gray to clear. Set aside to cool to room temperature.
Prep the lemons: While the simple syrup cools, scrub one lemon and slice into wheels. Juice enough of the remaining lemons to yield 1 cup of juice. Use a sieve to strain out any pulp.
Mix: In a large pitcher, stir together the cooled simple syrup, lemon juice, 2 cups of water, and rosé wine. Add in the reserved lemon wheels and set in your refrigerator until you’re ready to serve.
Serve: If you’re using club soda, fill 6-8 iced tea glasses with ice and divide the cocktail amongst the glasses, leaving about 2-inches of room at the top. Top with club soda. Or, ladle the mixture into ice-filled wine glasses. If you have any lemons left over, you can garnish with additional lemon wheels if desired. Cheers!

If you’d like to make a single-serving drink, combine 1/4 cup of rosé wine and 2/3 cups of lemonade over ice, stir gently, top with club soda (if using), and enjoy!
Opt for a dry rosé (I especially love La Grand' Vigne Rose Provence Coteaux Varois or Aix Rosé which are both under $20).
This cocktail can be made up to one day ahead. Simply wait to add ice and club soda and store the Rosé Lemonade covered in your refrigerator.
